The East Coast Wings Story Behind Every Bite
From a seaside kitchen in Rockland, Maine, we've been crafting bold, saucy east coast wings that keep our community coming back — fresh, never frozen, tossed to order.
Born on the Coast, Built on Flavor
It all started in 2014 when lifelong Rockland resident Marcus Calloway decided the Maine coast deserved better wings. Armed with a family hot-sauce recipe passed down from his grandmother, a cast-iron fryer, and a 600-square-foot kitchen on Ocean Street, he opened the doors to East Coast Wings.
Word spread fast. Within six months, the line was out the door every Friday night. What started as a neighborhood secret became Rockland's most-loved eat-in spot — praised for east coast wings that are crispy outside, juicy inside, and tossed in sauces you genuinely can't stop thinking about.
Today we occupy a full dining room at 58 Ocean St, serve a rotating menu of 25+ housemade sauces, and cater events from Portland to Bar Harbor. The cast-iron fryer is still here. The recipe hasn't changed.
Our Mission & Commitments
We're not just in the wing business — we're in the business of bringing people together around genuinely great food.
Flavor First
Every sauce is made in-house from scratch. No concentrates, no shortcuts. If it doesn't taste incredible, it doesn't leave the kitchen.
Fresh, Never Frozen
Our wings arrive fresh daily from local Maine suppliers. We believe the difference between good and great starts with the ingredient.
Community Roots
We hire local, source local, and give back locally. Rockland made us — supporting this community is baked into everything we do.
Genuine Hospitality
Every guest is treated like a regular, whether it's your first visit or your hundredth. Great food means nothing without a warm welcome.
Core Values That Shape Every Wing
These aren't words on a wall — they're the standards we hold ourselves to every single shift, every single order.
Order NowUncompromising Quality
From the wing itself to the last drop of sauce, quality is non-negotiable. We'd rather do less and do it right than cut corners at volume.
Radical Transparency
Our ingredients are listed, our sourcing is public, and our kitchen is an open book. We have nothing to hide and everything to show.
Continuous Improvement
We taste, tweak, and refine constantly. New sauces, new techniques, new ideas — standing still isn't our style.
People Over Profit
Happy team, happy guests. We invest in our staff, pay fair wages, and build a workplace people are proud to be part of.
A Decade of East Coast Wings
From a modest kitchen on Ocean Street to Rockland's favourite wing destination — here's how we got here.
The First Fryer
Marcus Calloway opens the original 600 sq ft East Coast Wings location at 58 Ocean St, Rockland. Opening night sells out in two hours.
The Sauce Lab is Born
We launch our dedicated sauce development program, growing from 8 flavors to 20+ — including our cult-favorite Ghost Pepper Honey glaze.
Full Dining Room Expansion
East Coast Wings triples its floor space, adding a full bar, 60-seat dining room, and a catering arm that quickly becomes our fastest-growing channel.
Pivoting & Persevering
Navigating a tough year, we launch online ordering and curbside pickup — and discover a whole new audience of wing lovers across Knox County.
Community Recognition
Named "Best Wings in Maine" by Portland Food Magazine. We celebrate with a community cookout and donate 500 meals to local shelters.
10 Years Strong
A decade of east coast wings. We hit 50,000 orders served, launch our 25th housemade sauce, and begin planning for the next chapter.
